This was my go to salad when Blue Eyes and I were single. For some reason, I had completely forgotten about it for over 10 years and I have only just recently rediscovered it. I prepared the vinaigrette with rapeseed and sunflower oils and lemon; salt and pepper. Then I add cherry tomatoes, diced avocado and grapefruit; whole prawns. Done! If you want to make it more consistent for a family-style recipe salad, you can add (cold) rice. My mother claims that the tomatoes don’t necessary go with the rest of the ingredients so I would then suggest mixing the prawns with grapefruit and avocado; and substituting the vinaigrette with mayonnaise.
