Broccoli is one of the best vegetable if you want to be heathly so it’s good to eat it regularly. Without going into too much detail, broccoli has more vitamin C than oranges (ounce to ounce), reduces the risk of heart attack, has anti-cancer properties (especially when steamed – see below), contains as much calcium as a glass of milk (ounce to ounce) and is a good source of iron, folate, fiber, potassium and vitamin K.
Easy peasy 1: Crunchy
Steamed 3 to 4 minutes, still crunchy with a drop of olive oil, will actually maximise the anti-cancer properties of Broccoli. Salt and pepper.
Easy peasy 2: Pureed
Steamed/boiled , not so crunchy anymore, puree with a table spoon of crème fraiche.
Impressive but still easy peasy 3: Broccoli Pesto
You will need one broccoli (for 4 people), steam or boil. In a pan, slighly mash with a fork, add one grated garlic glove, some lemon zest and pine nuts.
Add the boiled pasta to the pan, stir with the broccoli pesto, add the juice of one lemon (the one used for the zest), pour some olive oil and grated parmesan to your taste.
