I love the autumn. Not only can I indulge my obsession with knitwear and start bundling up, I look forward to all the comfort food that comes with the colder days and nights. And nothing makes The Captain happier than a warm fruit crumble for pudding.

The best part is that you can make up a batch of the crumble mixture and store in the freezer. I like to store a stash of frozen crumble mixture along with frozen mixed berries for those dessert emergencies. Fresh apple or pear filling also works with either a fresh or frozen crumble topping.

For the crumble mixture:

  • 1/2 cup all purpose flour
  • 1/2 cup shredded coconut
  • 1/2 cup rolled oats
  • 1/2 cup light brown sugar
  • 1/3 cup butter

Preheat oven to 220 degrees. In a bowl combine flour, coconut, rolled oats and sugar; mix well. Make a well in the centre. Melt butter and pour into bowl with dry ingredients. Mix to form a crumble.

In a separate bowl, sprinkle sugar over the frozen berries (I guestimate how much by filing a ramekin(s) or oven-proof dish with berries and then pouring back into the bowl) or if using apples – cinnamon and sugar; stir around a little. Sprinkle (or press firmly if you want more) the crumble topping over the fruit and bake for approximately 15-20 minutes until golden brown.
